*These are basic guidelines only. Please make adjustments based on size of the product.
Other factors such as sort, size, raw material, water volume, salt volume, immersion time, and defrost time may vary.
Things you will need:
Bowl, Salt, Plastic Food Wrap, Teaspoon, Thermometer, Cheesecloth or Thin Sponge-
not substitute with soft papers such as paper towels, napkins. (If you do not have neither,
please substitute hard material kitchen paper. Soft paper towels may stick to the product.)
Instructions:
1. Prepare lukewarm water (approximately 95 degrees Fahrenheit or 35 degrees Celsius) and
add salt at rate of two teaspoons per liter of water. Bring salinity to 3.5% .
2. Gently rinse the surface of product with cold water.
3. Immerse the product into the lukewarm saltwater solution for about 3 - 5 minutes.
*Time will may vary depending on size of product.
4. Remove from saltwater solution and gently rinse with cold water to
remove salt from product surface.
5. Gently remove excess moisture from the product.
6. Wrap the product in thin sponge or cheesecloth (if not available, substitute hard material kitchen paper). Finish by wrapping in plastic food
wrap. Use care to ensure that product is not wrapped too tightly, as it
is necessary to allow the product to breathe to achieve appropriate
color. Plastic food wrap should not come in direct contact with the
product.
7. Refrigerate for 3 – 5 hours, depending on size.

Notes
• Product should be consumed within 1 day of defrosting. Color will be compromised after 2 days.
• If the product is vacuum packed, remove the packaging prior to defrosting.
• During defrosting, the product shape may change, this is normal.
• Do not freeze the product once it has been defrosted. This will affect the color of the product.
